Graci "Arcuria" Etna Bianco, Mount Etna, Sicily, Italy

Graci Arcuria is from a single contrada called Arcuria (bascially a single vineyard designate, but based on lava flow) on the slopes of Mount Etna. 100% Carricante.  Incredibly tense.  This wine feels like it is trying to pull itself apart.  Give it a little time to warm up and wake up.  Stone fruit followed up by butterscotch, which blows off with a little time to reveal salty wet rocks.  Pair it with any of our seafood dishes particularly the Seared Sesame Tuna.
