Clay Shannon Sauvignon Blanc

The organic Sauvignon Blanc comes from the blend of our best Long Valley vineyard blocks, picked at its most expressive moment, with medium-low brix and bright acidity. We fermented in stainless steel with no addition of oak to keep the characteristics of the Sauvignon Blanc intact. Aging the wine in some acacia to help enhance its mouthfeel and to give it some floral notes. In the nose you find white peach, passion fruit and lime zest, as well as some herbaceous notes like bell pepper. Presents a rounded mouthfeel, well balanced with a refreshing acidity, enhancing its flavors.
